DELICIOUS CHEESECAKE RECIPE THAT OUR FAMILY HAS BEEN USING AT ALL OUR CELEBRATIONS. THE RECIPE CAN BE VARIED BY ADDING TINNED DRAINED FRUIT OR FRESH BERRIES TO THE MIXTURE . ITS A REAL WINNER IN OUR FAMILY AND MANY OTHER PEOPLE HAVE BEEN IMPRESSED.

Ingredients
- CRUMB CRUST
- 1 1/4 CUPS PLAIN BISCUIT (VANILLA WINE, MALT, OR ANY PLAIN SWEET BISCUIT)
- 90grmBUTTER OR MARGARINE
- FILLING
- 500grm CREAM CHEESE
- 1/2 cupCASTOR SUGAR
- 2TBSP LEMON JUICE
- 2tsp FINELY GRATED RIND
- 1tsp VANILLA ESSENCE
- 300 mil THICKENED CREAM
- 1tbsp GELETAINE
- 1/2 cup BOILING WATER
Directions
- LIGHTLY GREASE A 20cm SPRINGFORM TIN. CRUMB BISCUITS AND ADD MELTED BUTTER OR MARGARINE.
- TIP THE CRUMB MIXTURE INTO PREPARED TIN.PRESS DOWN FIRMLY AND CHILL IN REFRIDGERATOR WHILE MAKING FILLING.
- FILLING
- BEAT CREAM CHEESE UNTIL SOFT THEN ADD SUGARAND BEAT MIXTURE UNTIL SUGAR IS DISSOLVED. ADD LEMON JUICE , RIND AND VANILLA ESSENCE AND COMBINE WELL.
- BEAT CREAM UNTIL SOFT PEAKS ARE FORMED AND THEN FOLD INTO CREAM CHEESE MIXTURE WITH A METAL SPOON
- SPRINKLE GELETAINE OVER BOILING WATER AND STIR UNTIL GELETAINE DISSOLVES. ADD TO THE CREAM MIXTURE AND GENTLY STIR.
- POUR INTO CRUMB CRUST AND CHILL FOR 3 TO 4 HRS.
- DECORATE BEFORE SERVING WITH GRATED CHOCOLATE AND STRAWBERRIES.
