Kumara Salad


A very large salad with lots of different ingredients that make it very appealing with the different colours.. Best make the day before but add ther bananas the day of serving. With I take it to outings it is always liked. It will keep for several days which is handy in the summer when you don't want to do so much cooking. It is quite nice to add to the dressing some fresh herbs like chives and parsley. You can use most NZ grown ingredients in this.

Ingredients

  • 1 kg kumara (I do some of the different colours.)
  • 1 red pepper sliced.
  • 1 orange peeled and broken into segments,
  • 1 firm banana sliced.
  • 1/2 C seedless raisins
  • 1/2 C course coconut toasted,
  • 2 stalks of celery chopped (optional),
  • 2 rashers bacon cooked and chopped, (optional)
  • Dressing.
  • 1 1/4 C Mayonnaise or sour cream,
  • 1teasp curry powder,
  • 2 tablesp lemon juice,

    Directions

    1. Cook kumara and then slice into 2 cm cubes.into a large bowl.
    2. Chop other ingredients and add then mix well.
    3. Mix dressing ingredients well.
    4. Add dressing.
