Yummy Beef And Veggie Cheesey Shepherds Pie


This is an old favourite that has been in my family for years, tasty beef mince with veggies, cheesy mashed potato to top it!

Great for any occasion and super easy to make... kids love it :)

Give or take a little on the ingredients, its really up to you, how you like the taste or consistency

Ingredients

  • 400-500g of Premium Beef Mince
  • 3-4 Beef Oxo Cubes
  • A Cup or so of Frozen peas
  • 1 Carrot (Chopped into small pieces)
  • 1 Potato (Cut into small pieces)
  • 3-4 Potatoes (For mashing)
  • A Cup (or two) of Grated Cheese
  • Knob of Butter
  • Splash of Milk
  • Some Water

    Directions

    1. Brown the mince in a large-ish saucepan, while this is happening, peel 1 potato and carrot, then cut into small pieces
    2. Crumble the dry oxo cubes into the mince (use as little or as many as you like, this makes the beef into a rich pie filling), add half a cup of water and stir.
    3. Mix in cut potatoes and carrot into the mixture and leave to simmer until both veggies are soft enough to eat (this will require you putting your fork in and tasting pieces from time to time :P) - While this is happening you can add more water if needed, the aim is for the mince and veggies to be in a rich semi thick gravy.
    4. While this is cooking, peel and boil your extra potatoes
    5. Add frozen peas and continue to simmer for a few minutes
    6. Spoon mixture into a baking dish and pop in the fridge (this will stop the mashed potato topping sinking into the hot mixture)
    7. Drain boiled potatoes once they are soft, add a knob of butter, a splash of milk a cup or so of cheese and mash together until super creamy... no lumps!!
    8. Take cooling mixture out of the fridge and spoon mashed potato on top , smooth it out or use a fork to spread it carefully over the mince
    9. Sprinkle with extra cheese and pop in the over at around 160 - 180 degrees C (depending on the oven) and bake until bubbling and hot!
    10. 10. Serve!!! This is great with extra peas or a salad, or even chips and gravy
