Sultana Loaf
Always remember my Grandmother and mother making this. Tiny bit of butter and a nice cuppa and you are set.

Ingredients
- 1 cup of sultanas
- 1 cup of sugar
- 1 teaspoon of baking soda
- 25g butter
- 1cup of boiling water
- 2 cups flour
- 1 teaspoon of mixed spice
- 1 teaspoon of cinnamon
- 1 egg
- 1 teaspoon vaniilla essence
Directions
- Mix sultanas , sugar, baking soda together.
- Add butter chopped up, then boiling water.
- Mix flour and spices together, add to mixture, stir, then egg and vanilla essence. Combine together.
- Put in loaf tin and cook on 150 for and hour.
- Check with knife, into cake that it comes out clean.

A lovely loaf -the egg makes it more cake like . Took it to a meeting for morning tea and it disappeared! Worth trying
