The World's Best Potato Fritters
These delectable little babies are better and easier than hash browns, and will have everyone coming back for more. They are the perfect accompaniment to a good old kiwi BBQ of sausages, meat and salads. Cook on BBQ for ultimate crispy texture, and you'll be amazed how fast they disappear off the hot plate. My hubby made it up one day and we never have a BBQ without them.

Ingredients
- 1 medium potato
- 3 tablespoons flour
- 1 teaspoon baking powder
- 1 cup grated edam cheese
- milk
Directions
- Grate the potato. Add flour, baking powder and cheese, plus enough milk to make mixture wet and consistent.
- Fry on a well oiled BBQ hotplate until golden brown. Better to overcook and have crunchy than undercook and have soggy.
