Crunchy Topped Chicken Casserole


This recipe is so simple and easy to make.Its like a roast chicken meal but with a twist, a crunchy, stuffing flavoured topping
Really good made day or two earlier and reheated.Always get comments, its really worth a try.Guys love it!!

Ingredients

  • 1 whole Chicken
  • 2 slices Bacon (diced)
  • 1 cup water
  • 1-3 cloves Garlic (crushed )
  • 1 tbsp Soy sauce
  • 2 cups sliced Mushrooms (optional)
  • Cornflour (to thicken)
  • Topping:
  • 2 tbsp Butter
  • 1 onion (finely chopped)
  • 1 tsp mixed herbs
  • 1 cup homemade breadcrumbs

Directions

  1. Simmer jointed chicken in stock,made up of water,bacon,soy sauce ,garlic and mushrooms for about one hour
  2. Cool, take out chicken, de-bone and break up into pieces, put into a casserole dish.
  3. Thicken the stock with cornflour.then pour over chicken pieces.
  4. Topping:
  5. Cook onions in butter till soft,add mixed herbs and breadcrumbs ,stir to combine and spread over chicken.
  6. Bake until crisp and brown on the top

3 to 4 people 25 mins in oven approx 30 mins after chicken cooked
