Chicken And Asparagus Casserole
So easy and a great flavour combination! Popular family recipe. You can cook your own chicken and use the stock or if in a hurry buy a precooked chicken and stock from supermarket. You can make on the day, or the day before and heat just before your guests arrive. Goes well with salad and garlic bread or veges. Servings vary depending on the size of the chicken

Ingredients
- Meat from a whole cooked chicken.
- 2 onions
- A little butter
- 4 rashers bacon
- 1 tin asaragus spears
- Breadcrumbs - optional
- Sauce:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/4 cup milk
- 1 1/4 cup chicken stock (from boiled chicken)
- 50g cheese
- 1 tablespoon lemon juice
- The juice from the asparaus can
Directions
- Boil a whole chicken
- When cool enough strip off meat and place in oven serving dish
- Chop and fry onions and bacon in a little butter
- Place onions, bacon and asparagus on top of chicken
- Place butter in pan that onions and bacon were cooked, melt
- Add flour and fry for 1 minute
- Add remaining sauce ingredients and stir till thickens
- Pour over chicken
- Top with breadcrumbs if desired
- Place in oven 180 c for about 30 mins or until heated through
