Mt Fuji Skewered Chicken
A very tast Japanese entree - easy to prepare and very popular. Lovely served on a bed of Asian salad greens.

Ingredients
- 750g chicken meat, boned and cut into 2.5cm pieces
- 350g chicken bacon
- 8 leeks cut into 2.5cm pieces
- 4 red capsicums, seeded and cut into 2.5cm pieces
- Yakitori sauce (see recipe below)
- bamboo skweres, soaked in water for 20 minues
- ground black pepper or 5 spice mixture
Directions
- Prepare the first 4 ingredients, folding bacon rashers in half. Alternate ingreients on skewers.
- Grill over a high heat or barbecue, turning skweres, until meat is just barely cooked. Dip kebabs into yakitori sauce and grill again. Continue dipping kebabs into sauce and grilling, until all sides of the kebabs are well cooked.
- Serve seasoned with black pepper or 4 spice mixture.
- Vegetable can be substitued with other vegetables of your choice or availabilty.
- YAKITORI SAUCE
- 1/2 cup soy sauce or tamari
- 1/2 cup mirin wine or sherry
- 4 tablespoons sugar
- Combine ingredients in a saucepan and bring to the boil to burn off the alcohol.
