Quick And Easy - Pineapple Pudding


As children this was one of our favourite requests for pudding.
It was quick for our Mum to make and we all loved it.

Ingredients

  • 1 Packet pineapple or lemon jelly
  • 1 tin pineapple pieces or crushed pineapple
  • 2 eggs
  • 1 pint milk
  • 2 to 3 tablespoons custard powder

Directions

  1. Make jelly with juice of pineapple and boiling water to make up to 1-1/2 cups of liquid
  2. Place in fridge to cool while you do the rest
  3. Make custard with milk and egg yolks - make it fairly thick
  4. Add pineapple to jelly
  5. Add custard and stir to just mixed
  6. Beat egg whites till stiff
  7. Fold into mixture
  8. Leave to set in fridge
