Saucy Meat Loaf
This is so easy to make, quick, it makes enough for a main meal and enough left over for cold the next day, really nice in a sandwich or on its own.
The best thing about this recipe is that you will most probably have everything you need in your pantry and freezer.
Great flavour and the sauce is delicious.

Ingredients
- LOAF
- 500gms Beef Mince
- 500gms Sausage Meat
- 1 cup fresh Breadcrumbs
- 2 Onions (chopped)
- 2 tsp Hot Curry (more to taste if liked)
- 1 tbsp Parsley (chopped)
- 1 Egg
- Salt & Pepper (to taste)
- 1/2 cup Milk
- 1/2 cup Water
- Flour (about 1/2 - 3/4 cup)
- SAUCE
- 1/2 cup Water
- 1/2 cup Tomato Sauce
- 1/4 cup Worcester Sauce
- 1/4 cup Brown Sugar
- 25gms Butter
- 2 tbsp Vinegar
- 1 tsp Instant Coffee (heaped)
- 2 tbsp Lemon Juice
- Bring all to the boil and simmer for 5 mins, pour over loaves. (You can play with the quantities of Worcester Sauce, Vinegar and Lemon Juice to give it more of a bite).
Directions
- In a large bowl mix all ingredients together in the order above, lastly add milk and water. Mix well. This mixture should be a soft and floppy.
- Sprinkle generously with flour, separate mixture and roll into two loaves, covering well with the flour.
- Place rolls into baking dish, side by side. Bake 30mins in moderate oven (160deg C), depending on oven. Drain off any excess liquid. Pour sauce over and bake a further 30mins, basting often.
