Lizzy's Moroccan Lamb Pizza


I made up this recipe one night after going out for pizza and ordering a tasty Moroccan lamb one, and then trying a piece of the pizza my friend ordered, which came with a swirl of mango chutney, also tasty. Feeling creative one night, I combined the two ingredients, and added a whole bunch of other things I liked myself... turns out lots of other people liked the combination too! I'm always asked to make it after people have tried it once. It's nice and colourful too, so looks great on the plate. A bit of kiwi ingenuity I like to think - with one of our best ingredients, NZ lamb!

Ingredients

  • 1 red onion
  • 2 garlic cloves
  • 2-3 lamb steaks
  • About 4 mushrooms
  • 1 ½ teaspoons Moroccan seasoning
  • ½ cup fresh coriander, chopped
  • ½ cup fresh mint, chopped
  • 3-4 tablespoons Mango chutney (or just mango sauce!)
  • 2/3 cup frozen spinach (defrosted!)
  • 3 tablespoons roughly chopped pine nuts
  • 2/3 cup grated parmesan cheese
  • 1 pizza base (Romano are good)
  • 1-2 tablespoons olive oil
  • Freshly ground pepper
  • ½ small pot Greek style plain yoghurt
  • Handful of fresh coriander to add at the end

Directions

  1. Preheat oven to 200 degrees celsius.
  2. Fry pine nuts until brown, or place under the grill. Set aside.
  3. Chop onion and garlic and fry in olive oil for about two minutes.
  4. Add chopped up lamb and fry for a couple of minutes.
  5. Add Moroccan seasoning and a spoonful of the mango chutney.
  6. Add chopped mushrooms to lamb pan, cook until soft and lamb is browned.
  7. Add some pepper and a tablespoon each of the coriander and mint.
  8. Remove excess water from spinach, and spread over pizza base.
  9. Once lamb and mushroom mixture is done, spread evenly over pizza.
  10. Top with grated parmesan and crack pepper over top.
  11. Sprinkle pine nuts over pizza.
  12. Place on preheated oven tray and place in oven.
  13. Cook for around 15 minutes.
  14. Mix chopped mint and coriander with yoghurt.
  15. Once pizzas are done, swirl on mango sauce and yoghurt mixture.
  16. Sprinkle some fresh coriander in the middle.
  17. Slice, and serve!
