Community Fish Pie


The most devine fish pie which has people constantly asking for the recipe. We use this recipe at the Combined Churches Community Lunch in rotation with other recipes. There is never any left for the scrap buckets afterwards. The recipe came about to utilise some donated ingredients and make it as economical as possible.

Ingredients

  • 1 diced red onion
  • 2 stalks celery finely diced
  • 25grams butter
  • 3 tablespoons cooking oil
  • 2 diced gherkins
  • 2 cups milk
  • 2 tablespoons cornflour
  • 2 cups grated cheese
  • 2 cups kornies
  • 300 grams flaked smoked fish

Directions

  1. Lightly cook onion and celery in butter and 1 tablespoon of oil.
  2. Add milk keeping half a cup back to mix with cornflour.
  3. When near boiling add cornflour milk mix and stir until thickened.
  4. Remove from heat and add gherkins, 1 cup grated cheese and flaked fish.
  5. Place in oven proof dish.
  6. Combine Kornies, cheese and remaining oil and mix well.
  7. Top fish mixture in dish.
  8. Bake until heated through and golden on top approx 20 mintues at 180degrees celcius.
