Spuddy Duddy Meal


this is a meal where the potato is the bowl in which it is served. crazy but yummy and it saves on the washing up

Ingredients

  • 1 large washed potato per person (skin on)
  • 500g mince
  • 1 large carrot grated
  • 1 zucchini grated
  • 1 onion diced
  • 250ml of chicken stock
  • a dash of soya sauce
  • 1T wheatgerm
  • 1T bran flakes
  • 1T flour
  • 1T cornflour
  • salt and pepper
  • 1tsp of mixed herbs or 1T chopped fresh herbs
  • 1T brown sugar
  • grated cheese

Directions

  1. prick the scrubbed potatoes and spray with cooking oil, bake in a moderate oven until cooked through. remove and cool.
  2. brown mince and onion in a pan with a little oil then add the stock, grated vegetables, soya sauce,
  3. salt and pepper to taste, herbs, brown sugar.
  4. simmer for a few minutes
  5. in a bowl mix the flours together and add a little water to make a runny paste, pour into mince to thicken. Add more of this mix if needed.
  6. put mince aside to cool a bit.
  7. carefully remove the tops of the potatoes and with a spoon remove the inside without breaking through the skins. Mash this then add to the mince mix. spoon mince mixture into the potatoes, sprinkle with grated cheese and diced parsley. pop the tops back on, then spray with cooking oil and bake in a moderate oven for 15mins.
  8. serve with a tossed salad or other cooked vegetables.
  9. note: any left over mince mixture can be used on toast for a yummy breaky
