Not everyone loves the taste of kiwifruit, but even if that’s you, you should still try this kiwifruit ginger cake. You might be surprised at just how delicious this cake is.

Instructions
  1. Cream butter & sugar, add eggs.
  2. Next add mashed kiwifruit and the soda dissolved in boiling milk.
  3. Add sifted flour baking powder & ginger.
  4. Bake in a 17.5cm greased cake tin and cook for 45 minutes at 180d or until skewer comes out clean.
  5. Ice when cold with chocolate icing.

  1. At 45 min our cake had a clean skewer, but we allowed it to cool partially in the the tin and the bottom went a bit gooey. Cake very moist, I preferred the higher-cooked edges. Maybe it would have been better if removed from tin immediately once out of oven, or maybe we’ll cook it a little longer next time, perhaps baking it naked on a sheet for the last 5 min. (not a big kiwifruit fan, we doubled the ginger. Tasted ok.)
