B For Beauuuutiful Banana Cake


I arrived from America in 1989 to live here with my new Kiwi husband, Paul. I asked him what his FAVOURITE thing to eat was and he said 'Banana Cake'. So, I rang his sister, Patrice and she read me a recipe over the phone. Only to discover as she read it, that I didn't have a clue what those weights and measurements meant. So, I did a simple Kiwi-Yankee (aka Kwankee) conversion calculation and called 8 ounces to be 1 cup and waa laa.....the banana cake was beauuuuutiful. We've been married 20 years, so it must be a goodie!

Ingredients

  • 2 frozen 'black as' bananas (put the near dead bananas in the freezer just for moments like these)
  • 2 eggs
  • 1/2 cup butter
  • 3/4 cup sugar (who cares what kind: regular or caster!!)
  • 1 tsp baking soda
  • 2 TBL boiling milk
  • 1/4 tsp baking powder
  • 1 cup of flour
  • AND a lemon, some milk and icing sugar for icing (of course!!)

    Directions

    1. Chuck the sifter and the fancy machines. Throw the 'black as' bananas in the sink in their skins or in a bowl if your sink isn't nice and hygenic! Cover them with really hot tap water and let em thaw out. Meanwhile, grab a medium sized bowl and a dinner fork. Mix together the butter, sugar, then plop in the two eggs. Give em a good ole stir to the beat of God of Nations on the old 78 setting for a 45 setting LP. Very cautiously, ooze the bananas out of their skins into a separate wee bowl. Use the same fork and smash em up good. Dump them in to the first mixture. Now, heat up some milk in the micro or in a pan on the stovetop....bring it to the boil. Careful if your using the micro!! Put the 2 big spoonfuls of milk into a wee cup and drop the soda ontop of it, then give it a very little stir using Grammie's FAVOURITE tea spoon. Plonk it into the mixture. Drop the flour, then the baking powder ontop of the pile and mix it with your friend Mr. Fork. Give it a good mix. Don't be afraid. Now, call the man of the house and ask him to have a taste test. This has become 'the most important part of the process at our house'. Grab a round, square or even an American bundt pan and give it a bit of a spray with the oily stuff. A good spray. Then tip your mixture into the pan. Don't knock it around, but make sure it's level. Pop er on the middle shelf in the pre-heated oven at 175 degrees C for 35 minutes and then give it a poke with a toothpick. When it comes out clean --she's done. Rest a few lazy minutes, then tip er out onto the rack - right side up! Let cool. Oh, she's real cool, alright. While your waiting, make a lemon icing (or vanilla if you don't have a lemon). I just guess and put the juice of a lemon, about 1 TBL of milk and a bunch of icing sugar until it's the right consistency. All the while stirring with the same good of friend Mr Fork (only washed by now!). Paul says its the best blinkin banana cake in the world. I'm sure you'll agree.

    We are sure it will taste great but reserve judgement until taste test when we are in Woody. Will bring bananas in suitcase should be black and mushy by arrival. Will bring mr & mrs fork
