Fantastic Feta And Pumpkin Fritters
Tasty and light, these fritters are loved by all. Serve them with salad greens, crispy bacon and sweet chilli sauce or your favourite chutney. Or for a special occasion try making them mini and serving them as starters/nibbles!

Ingredients
- 4 Eggs, lightly beaten
- 1cup Flour
- 2tspns Baking Powder
- 1/2 cup parsley
- 1/2 cup Feta Cheese
- 1 cup Grated Pumpkin
- 1tspn Crushed Garlic
- Salt and Pepper to taste
- Butter and Oil for frying
Directions
- Mix all ingredients in a bowl.
- Heat a little butter and oil together in a large frypan.
- Place tablespoonfuls of the mixture into pan in batches.
- Cook until puffed and golden.
- Keep cooked fritters warm in the oven while frying the remainder.

Fabulous recipe,but I needed to thin down batter with a little milk as was too thick...very very nice.
