Chocoberry 'N' Coconut Muffins
I love the combination of chocolate, blueberries and coconut in this recipe. I was inspired to create this recipe when I was visiting Dunedin. I stopped in at a cafe to get a coffee and was tempted by these delicious looking muffins. I couldn't resist when the waitress told me what was in them. They look great and taste awesome. (and so easy to make!)

Ingredients
- 2 cups plain white flour
- 3 tsp baking powder
- 3/4 cup castor sugar
- pinch of salt
- 3/4 cup thread coconut
- 1 cup milk
- 100 g butter (melted)
- 1 egg
- 1/2 cup chocolate bits (white or dark)
- 1 cup frozen blueberries
Directions
- Grease muffin tray or line with paper cup cases.
- Put all ingredients into a large bowl adding blueberries last.
- Mix together until just combined.
- Spoon into 12 large muffin pans.
- Bake 200°C (180°C fan) for 18 - 20 minutes.
- Leave to cool.
- Delicious served warm with a dusting of icing sugar.
