Chocoberry 'N' Coconut Muffins


I love the combination of chocolate, blueberries and coconut in this recipe. I was inspired to create this recipe when I was visiting Dunedin. I stopped in at a cafe to get a coffee and was tempted by these delicious looking muffins. I couldn't resist when the waitress told me what was in them. They look great and taste awesome. (and so easy to make!)

Ingredients

  • 2 cups plain white flour
  • 3 tsp baking powder
  • 3/4 cup castor sugar
  • pinch of salt
  • 3/4 cup thread coconut
  • 1 cup milk
  • 100 g butter (melted)
  • 1 egg
  • 1/2 cup chocolate bits (white or dark)
  • 1 cup frozen blueberries

Directions

  1. Grease muffin tray or line with paper cup cases.
  2. Put all ingredients into a large bowl adding blueberries last.
  3. Mix together until just combined.
  4. Spoon into 12 large muffin pans.
  5. Bake 200°C (180°C fan) for 18 - 20 minutes.
  6. Leave to cool.
  7. Delicious served warm with a dusting of icing sugar.
