Gooey Black Forest Muffins


These muffins have a soft fluffy texture and a rich decadent flavour. I felt like doing some baking one evening with the berries I had in the freezer so this is what I came up with, they are a real hit! A quick and easy recipe which is sure to please.

The branded ingredients I have listed are my favourite to use, however these are only suggestions and the recipe will work just as nicely with your favourites too.

Ingredients

  • 175 grams self raising flour
  • 100 grams caster sugar
  • 25 grams cocoa
  • 1 large egg
  • 75 grams Butter (melted)
  • 1 pot (125grams) of berry yoghurt (Meadowfresh Mixed Berry)
  • 50mls milk
  • 1 cup fresh/frozen (but since thawed) berries (Orchard Gold mix)
  • A few tablespoons of Raspberry Jam (Barkers)

    Directions

    1. Heat the oven to 190 C
    2. Sift the flour and cocoa into a bowl and stir in the sugar.
    3. In a large jug mix together the egg, butter, yoghurt and milk using a fork.
    4. Pour the wet ingredients into the dry and stir gently together until just combined. Gently fold in berries.
    5. Put 2-3 teaspoons of the mixture into each muffin case.
    6. Bake for 10-15 minutes until risen and firm.
    7. Once cooled, poke a small hole in the top of the muffin and add a dollop of Jam.
    8. Enjoy!
