Nana Hannah's Whitebait Omelette To Die For
Don't fiddle with patties, make one omelette and divide, though you will want to eat it all yourself. This way gives a much moister result. Whitebait is so subtle it needs no yuppy extra ingredients or flavourings. You can use oil instead of butter, but butter definitely gives a better flavour and not too much is used so no need for the guilts! Shut your eyes during the first mouthful to savour the unique flavour.

Ingredients
- 200 grams whitebait (must be NZ for optimum results)
- 2 eggs
- 1 teasp baking powder
- 2 teasp lemon pepper
- 2 tablespoons lemon juice
- Butter for frying
Directions
- Heat butter in omelette pan or smallish frypan.
- Beat all ingredients together except for whitebait.
- Gently fold in whitebait
- Cook over moderate heat until bottom is golden
- Place large plate on top of frypan and flip over (careful now!) to place omelette onto plate.
- Slide back into pan to which you may need to add a little extra butter.
- Cook until golden on bottom.
- Slice in half and place on warm plates.

Very yummy recipe. I found there was too much lemon pepper for my taste,so will cut back next time, but it was oh so easy to make compared to fritters.
