Nana Hannah's Whitebait Omelette To Die For


Don't fiddle with patties, make one omelette and divide, though you will want to eat it all yourself. This way gives a much moister result. Whitebait is so subtle it needs no yuppy extra ingredients or flavourings. You can use oil instead of butter, but butter definitely gives a better flavour and not too much is used so no need for the guilts! Shut your eyes during the first mouthful to savour the unique flavour.

Ingredients

  • 200 grams whitebait (must be NZ for optimum results)
  • 2 eggs
  • 1 teasp baking powder
  • 2 teasp lemon pepper
  • 2 tablespoons lemon juice
  • Butter for frying

    Directions

    1. Heat butter in omelette pan or smallish frypan.
    2. Beat all ingredients together except for whitebait.
    3. Gently fold in whitebait
    4. Cook over moderate heat until bottom is golden
    5. Place large plate on top of frypan and flip over (careful now!) to place omelette onto plate.
    6. Slide back into pan to which you may need to add a little extra butter.
    7. Cook until golden on bottom.
    8. Slice in half and place on warm plates.

    Very yummy recipe. I found there was too much lemon pepper for my taste,so will cut back next time, but it was oh so easy to make compared to fritters.
