Spinach And Feta Crepes
A delicious, light but nourishing meal. Ideal when you have friends for supper. An easy way to get spinach into kids!

Ingredients
- Crepes
- 4 eggs
- 1 cup (250 ml) oil
- 4 cups wholemeal flour
- 4 cups (250 ml) water
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1/4 cup (60 ml) vinegar
- Filling
- 2 good-sized bunches spinach
- 1 large onion - chopped
- 75 gm margarine
- 1/3 cup (80 ml) flour
- 3/4 cup (180 ml) cream
- 2 vegetable stock cubes (or to taste)
- 125 gm Feta cheese
- 125 gm chunky cottage cheese
- 2 - 3 cups (5 - 700 ml) white sauce (not too thick)
- Handful of sunflower seeds
Directions
- Crepes (Pancakes)
- Make beforehand:
- Beat eggs, oil and vinegar together
- Add dry ingredients and water in turn
- Mix to a smooth batter.
- Let the batter rest for one hour
- Bake in a pancake skillet
- Filling
- Wash and blanch spinach, including stalks, and drain
- Saute the onion in the margarine
- Add the flour and cook for 2 minutes, stirring
- Add the cream
- Add the spinach
- Crumble in the stock cubes
- Let stand to cool
- Once cool, fill the pancakes and roll up
- Lay them side by side in a greased flat oven-proof dish
- Pour over the white sauce
- Sprinkle generously with grated cheese and sunflower seeds
- Bake at 200 degrees C until bubbly
- Serve with salad and jacket potatoes.
