Zucchini Patties
A yummy vegetarian pattie that can be eaten on its own or in a burger bun with lettuce, tomatoes and cheese with a satay sauce and raita which is our preference! A great recipe when you feel you need a night off the meat.

Ingredients
- 2 Zucchinis
- 2 tablespoons of toasted nuts ie pumpkin, sesame
- 2 tablespoons of fresh mint
- 70gr pack of peanut peices
- 1/2 cup of cooked rice
- 1/2 cup of breadcrumbs
- 1 egg
Directions
- Grate the zucchinis and add to all the other ingredients. Make into patties and coat with a small amount of flour.
- Cook in a fry pan with a little olive oil until brown
- Serve either in a burger bun with a salad or on their own with some raita...delish!
