Zucchini Patties


A yummy vegetarian pattie that can be eaten on its own or in a burger bun with lettuce, tomatoes and cheese with a satay sauce and raita which is our preference! A great recipe when you feel you need a night off the meat.

Ingredients

  • 2 Zucchinis
  • 2 tablespoons of toasted nuts ie pumpkin, sesame
  • 2 tablespoons of fresh mint
  • 70gr pack of peanut peices
  • 1/2 cup of cooked rice
  • 1/2 cup of breadcrumbs
  • 1 egg

    Directions

    1. Grate the zucchinis and add to all the other ingredients. Make into patties and coat with a small amount of flour.
    2. Cook in a fry pan with a little olive oil until brown
    3. Serve either in a burger bun with a salad or on their own with some raita...delish!
