Leftover Vege Scramble
Using leftover veges in a healthy way - quick and easy
I made this up for a quick meal to take to work and zap in the microwave.
Giving some of the 5+ a day requirement.

Ingredients
- 3 eggs,
- 2cups of chopped cooked veges
- or 2 cups of frozen veges partly cooked
- Leftover cold meat diced
- or chopped rasher of bacon
- or small tin salmon drained
- 1 cup of grated cheese
- 23cm pie plate or casserole lid lightly sprayed with oil
Directions
- Turn oven to 200C
- Beat eggs in a mixing bowl
- Add vegetables and and some of the cheese.
- If it looks a bit dry, beat another egg and pour over.
- Pour into dish and scatter cheese on top
- Bake about 20minutes until set.
- 4 servings
- Slice, serve and enjoy with your favourite salad
