Leftover Vege Scramble


Using leftover veges in a healthy way - quick and easy
I made this up for a quick meal to take to work and zap in the microwave.
Giving some of the 5+ a day requirement.

Ingredients

  • 3 eggs,
  • 2cups of chopped cooked veges
  • or 2 cups of frozen veges partly cooked
  • Leftover cold meat diced
  • or chopped rasher of bacon
  • or small tin salmon drained
  • 1 cup of grated cheese
  • 23cm pie plate or casserole lid lightly sprayed with oil

    Directions

    1. Turn oven to 200C
    2. Beat eggs in a mixing bowl
    3. Add vegetables and and some of the cheese.
    4. If it looks a bit dry, beat another egg and pour over.
    5. Pour into dish and scatter cheese on top
    6. Bake about 20minutes until set.
    7. 4 servings
    8. Slice, serve and enjoy with your favourite salad
