Fabulous Stuffed French Toast - You'll Be Going Back For 2Nd & 3Rds!!!!!
In our household we like to entertain with brunch and this recipe was an idea that became an instant hit! Once you've made it ,it will be a regular addition for weekends and in our house also a nice light Sunday tea. It all started with the cream cheese and apricot jam filling and now I've added the "banana, cream cheese and chocolate chip" filling! Both are so fabulous that there is no clear favourite and now I just make both....... try them both and you make the decision which one is best!
Not a recipe for the waist line, but a truly decadent and indulgent treat! Happy eating and I look forward to your feedback!
Ingredients
- 1 White Tank loaf (find it at the grocery store or your local bakery)
- Fillings
- 170-180g cream cheese (I use Philidelphia)
- 2 Tbspn Apricot jam
- Or
- 170g - 180g Cream cheese
- 2 Tbspn choc chips
- 1-2 bananas
- ** Half the recipes if you want a bit of both**
- Egg batter for dipping the bread in
- 4 eggs (I use freerange)
- 1/4 C icing sugar
- 1 tspn vanilla essence
- 200ml cream
- approx 75g butter for frying.......
Directions
- Slice the crust off each end of your tank loaf and discard, then slice the loaf into approx 1 inch slices ( you should get 12 slices from you loaf.)
- With a sharp serrated knife, slice a pocket thru the middle of each slice (like you would a pita bread)
- Mix together in a bowl your filling ingrediants until well combined (if making the banana filling slice your banana, spread the cream cheese & choc chips into your pocket of bread and then place about 4 slices of banana on top.)
- In a medium sized bowl or dish whisk together the batter ingrediants until smooth.
- Drop your bread into the batter, coating both sides and panfry on a low to medium heat in the butter until golden brown on both sides.
- I cook off in batches of 4 with 25g of the butter each time. Serve with maple syrup and prepare to be impressed!

The savoury version works well..... I did the smoked chicken filling and had it with spiced apricot sauce and sweet chilli sauce........ pretty good, but you still can't beat the original!! Has anyone tried it yet and if so I want you to let me know what you thought!! Happy Eating!!

I'm just about to try out your recipe but have everything but the cream. I guess you could use milk for a healthier version and maybe even cottage cheese instead of cream cheese if you were a real health freek. Bugga it. I'm off to buy some cream from the Dairy. I wanna try the original, it sounds decadent.

Hello again.... have just been brainstorming with my work mate and we both think this could be a great savoury dish as well......
Stuff with cooked bacon, cream cheese, capsicum and basil pesto.... or how about smoked chicken, cream cheese, pine nuts and apricots? Omit the sugar and vanilla from the batter and add salt and pepper and perhaps even a tablespoon of powered parmesan? I'll trial a savoury version this weekend and let you know how it goes!
